ETUDE DE LA LIPOLYSE DANS LE SMEN MAROCAIN

Summary
Two assays of Moroccan smen were carried out in laboratory using lipase type VII of Candida zeylanoides and spores of a lipolytic strain Penicilijuin roquefortii inoculated to processed pasteurized butter. the assays were sampled alter 0, 5, 25,40, 50, 60 and 85 days for FFA determinations by the GC/MS system (Gas Chromatography/Mass Spectrometry). Sensory evaluations were done in parallel. Results showed that short chain FFA were freed first , followed by the unsaturated C18:l (oleic acid) and the saturated long chain fatty acids C12 to Cl 8:0 (lauric, myristic, palmitic and stearic). the unsaturated C18:2 (linoleic acid) and C18:3 (linolenic acid) were released last significant differences among the release rates were observed, being higher for the saturated group (C12 to C 8:0) and lower for the other free fatty acids (FFA).
